I brew a lot of beer now. But never did a wine. Trying to figure out differences in the processes other than the obvious instructions coming with the kit to put in strange chemicals.

The wine kits does not say to aerate and put oxygen in the wort before pitching. Is that something you do with juice before pitching yeast? How about other differences?

Please and Thank you.

I think it's usually involved in the first few steps where they say "Stir vigorously". Oxygen would be introduced this way, as well as when you're pouring in the juice and water.

Unlike beer, where we've boiled all the oxygen out of the water.

I'm not positive but I don't think you boil most wine kits... so you won't drive off as much oxygen as you do when boiling wort for beer. I usually just whip it up a little bit while stirring as mentioned. Beer I shake the crap out of before pitching.
