Adding Yeast When Bottling 1-year-old Brett Beer

Greetings!

I have collected some Belgian bottles and plan to bottle, cork and cage some brett beer I made a year ago. It is a nearly 10% beer. It was fermented with saison yeast for a few days and then I transferred it and added brettanomyces. After a few months with the brett, I transferred to a keg for aging and it has set in the keg for the past 9-10 months. Now the time has come for me to bottle it. I plan to add the dregs of 1-2 bottles of Orval as well as some additional dry yeast. I plan to use champagne yeast for carbonation and maybe some additional dryness, though I doubt it will change the flavor.
My question is: How much yeast should I use for bottling 4-5 gallons of beer? Would you suggest a different yeast for bottling? Thanks for the input.
