So getting creative and little brash as I become a better brewer I made what was intended to be a honey IIPA that has turned out to be what I think is mead-like. Considering I used 5 pounds of honey I guess I shouldn't be surprised.

It tastes fantastic with a very high ABV (probably 10% or more). It still isn't carbonated though. It has only been 9 days since I bottled and I only tried one to see how they are coming along, but I'm wondering how long I should expect it to take and what level of carbonation I should expect.

Will appreciate your input. I'm sold on this stuff!
 
Sounds more like an "Imperial Braggott" than an actual mead, Sounds like it'll turn out good, serendipity rocks, don't it?

Yep I think you're right! Based on how sharp the alcohol tastes I think this needs to sit for a while.
