I understand that 6 row is better for grain bills with a high number of adjuncts/unfermentables as it has a higher diastatic power.

My question is, wouldn't all grainbills benefit from the higher diastatic power? In other words, why not use 6 row exclusivley in place of 2 row?

Looking pros/cons for 6 row from people that have used it. Thanks!!!!
 
As long as the starches get converted to sugars within a reasonable timeframe, the diastatic power of the malt is much less relevant than the flavor. 6-row doesn't taste the same as 2-row, has a higher husk-to-starch ratio, and more proteins. Generally, these properties aren't desirable for brewing.
