Tasting Notes
A bit bigger Cali, dry finish, NB hops shining, enough malt to back it up.
This Cali Common has won several gold and silver medals over the years. Needs about 4 weeks lagering to smooth out the edges.

Water (these water treatments were recommended by Gordon Strong, works great)
RO water treated with 1/4 TSP 10% phosphoric per 5 gallons
.5 TSP caci2 and .5 TSP caso4 in mash

Mash Schedule
152F for 60 minutes
168F for 15 mnutes

No Sparge - add 5 gallons of water to Tun and added grain to reach 152F, added ~4.125 gallons of water to tun to raise to mash out temps, drained into boil kettle, acquired 7.5 gallons of wort pre boil. No Sparge eff is lower I calculate my eff to be 67%.
 
I used Wyeast 2112 and the fermentation schedule was 11 days @ 58F, 3 days @ 68F, reduce temp 2 degrees per day until 58F then cold crashed at 40F for 3 additional days, racked to keg and lagered @ 34F for 28 days..
