Hey HBT,

Brewed up this stout on 3/21, been two weeks today in primary. Pitched a healthy starter of NorCal 1 from Gigayeast via MrMalty pitch rates. Fermentation took off quick at 64F in my mini fridge.

1.094 OG

Have not taken a FG or taste yet, figuring if I should keg this or not. This also got 1oz of low fat TCHO cocoa powder at the last 5 minutes of the boil.

If you look at the pictures theres some weird looking bubbles across the top after the krausen has fallen, and a surface gunk (maybe fat from cocoa powder?).

Any ideas? Infected?

Thanks! Will take a sample tomorrow and FG, update the thread. Plan to keg and age for 3 months on 2oz French oak medium cubes soaked in Elijah Craig 12 year bourbon.

Chips take maybe 7 or 8 days, cubes a couple weeks maybe, 3 months would be a bit long.. Either way, leave as little head space as possible.

Tastes great 1.032 currently, going to let it sit another week before kegging.
