Notes:

This was an attempt to make something similar to the Trader Joes Vintage ales that come out each year.
Tasting this after it sat in secondary for 5 weeks, its an amazing beer. Its going to go into a corn whiskey barrel for aging.


Knox gelatine added at 5 weeks in secondary to clarify further. 1/2 packet in 1 cup warm water till dissolved, then dumped in and swirled.

2 weeks in texas corn whiskey barrel. Barrel had whiskey in it 1 week prior to putting in this beer. You can use oak chips soaked in corn whiskey as a substitute.

Bottle condition for as long as possible. MIN 4 months

Congratulations dude, this is on my list for the winter. Nothing like a good dark belgian in december
