I am fiddling with a nitro setup to serve a holiday stout at our upcoming party. I have primed the keg with corn sugar to be at 1.2 volumes of CO2 and hooked up the cylinder of "beergas" at 30psi to seal the keg. My question is, now what? Should I-
1. Disconnect the cylinder and leave it at 30psi
2. Disconnect the cylinder and release the pressure
3. something else?

My holiday party guests thank you!

Might as well disconnect the beergas and let the yeast do their thing.

If you leave the beergas connected and turned on the CO2 component will try to carbonate the beer. Once the yeast kick in, they'll bring the CO2 volumes up by whatever was calculated - which will add to whatever the beergas has had time to provide.

Might not be all that much higher but who knows...

Cheers!
