Hey
I'm brewing an Oatmeal Stout with an OG target of 1.066 tomorrow.
I had an old packet of WLP004 Irish Ale yeast with a manufactured date of 12th April 2016. Using Mr Malty etc. it had 0% viability but I thought why not make a starter (2L) and see what happens. 48hours later and I've got activity.
Now been as I don't know what the cell count is do I:
(a) chuck the starter in with a pack of Windsor dry yeast
(b) only use the starter and hope there is a high enough cell count for a healthy fermentation
(c) forget the WLP004 and just use the Windsor

Cheers!

If it were me, I would just use the starter because I'm comfortable doing that kind of thing and experience has shown me that the beer should turn out fine. That said, if you're squeamish about it then I'd just say pitch the packet and sleep better. Either way you'll make beer. :mug:

Cheers. I ended up just chucking the starter in and it's taken nicely. I'll update this later with how it ends up.
