I haven't brewed in about 6 months! To restock I am brewing a 10 gallon batch. I don't want 10 gallons of the same beer, so I am brewing an APA and IPA with one wort. Please provide feedback.
Base wort for both beers (based on CYBI Terrapin Rye Pale Ale):
Recipe Specifications
--------------------------
Boil Size: 13.72 gal
Post Boil Volume: 12.22 gal
Batch Size (fermenter): 11.00 gal
Bottling Volume: 10.25 gal
Estimated OG: 1.049 SG
Estimated Color: 7.9 SRM
Estimated IBU: 20 IBUs
Brewhouse Efficiency: 65.00 %
Est Mash Efficiency: 69.4 %
Boil Time: 75 Minutes
Ingredients:
------------
Amt Name Type # %/IBU
15 lbs Pale Malt (2 Row) US (2.0 SRM) Grain 5 64.5 %
2 lbs Munich Malt (9.0 SRM) Grain 6 8.6 %
2 lbs Rye, Flaked (2.0 SRM) Grain 7 8.6 %
1 lbs 8.0 oz Honey Malt (25.0 SRM) Grain 8 6.5 %
1 lbs 8.0 oz Victory Malt (25.0 SRM) Grain 9 6.5 %
1 lbs Rye Malt (4.7 SRM) Grain 10 4.3 %
4.0 oz Acid Malt (3.0 SRM) Grain 11 1.1 %
1.00 oz Chinook [12.10 %] - Boil 60.0 min Hop 12 20.9 IBUs
1.00 Items Whirlfloc Tablet (Boil 15.0 mins) Fining 13 -
I will transfer about 5.5 gallons to another pot and steep/whirlpool these hops for 30 minutes:
.5 oz Amarillo [9.20 %] - Steep/Whirlpool 30. Hop 14 6.1 IBUs
.5 oz Citra [12.00 %] - Steep/Whirlpool 30.0 Hop 15 8.0 IBUs
.5 oz Simcoe [13.00 %] - Steep/Whirlpool 30.0 Hop 16 8.6 IBUs
1.5 pkg Safale American (DCL/Fermentis #US-05) Yeast 17 -
1.50 oz Amarillo [9.20 %] - Dry Hop 4.0 Days Hop 18 0.0 IBUs
0.50 oz Simcoe [13.00 %] - Dry Hop 4.0 Days Hop 19 0.0 IBUs
To make the IPA, I will add 1 lb. DME and 12 oz. sugar to the remaining 5.5 gallons. This will raise the gravity to about 1.063. To this wort I will add the following hops and boil for five minutes:
4 oz Centennial (22 ibu)
2 oz Manarina Bavaria (10.6 ibu)
1 oz Eldorado (9.3 ibu)
Dry Hop the IPA with 2 oz Mandarina Bavaria
Thanks!
