I just started brewing again after taking a year and a half off .... I wanted to try and simplify my process a little so I thought I'd give pitching onto a yeast cake a shot ....

I do 4 gallon bathes BIAB style

everything is going fine except I pitched a 1.046 wheat beer onto a cake from a 1.058 pale ale ... I don't really care if I get a carry over in color or some flavor, but the fermentation took off like a rocket and I'm wondering if anyone has ever done this before and how it turned out?

within 4 hours the airlock was bubbling like mad ... thoughts?
 
Yeah, I've done that before. It's a massive over pitch. I had krausen coming out my airlock for days (lucky it didn't plug). The beer turned out fine though. Just keep an eye on your airlock and consider using a blowoff tube.
 
cool thanks for the info ... I have a ton of head space so I don't think I'll need a blow off but man that airlock is going nuts ... its 4 gallons in a 7.9 gallon bucket fermenter ... cheers
