Here's a Dunkel I brewed up and have been getting rave reviews for. It was inspired by my recent trip to Bavaria. I compared it to a Franziskaner and it's dead on as far as color goes. A little roastier than the Franziskaner but so dang good.

Could you use briess midnight wheat malt as a dark wheat substitute and still get the same color?

Dark wheat is basically a munich malt wheat malt. Around 8 to 10L. Midnight wheat is a black malt. Like 200-500L or something. So no, not in those quantities.
 
Looks awesome. Just jumped on my LHBS's website and sure enough they have dark wheat malt. I saved some 3068 from my last hefe and was thinking of doing a dunkel next. I also happen to have an oz of Tett in the freezer. Thanks for the hookup on my next recipe!

It's up next actually. I just kegged a beer and have a free fermenter, so I may try to brew it this weekend if I have time. I brewed BM's OktoberFAST last weekend, so between that and your dunkel I'll be all set to drink like a German this fall.

How quickly do you usually turn this one around? I was drinking my last hefe in about 2 weeks but I'm thinking this might take a little longer.
 
Oh nice. That Oktoberfest looks good too.
I let it go 2 weeks in the fermenter and kegged it. Was good to go!
