Wondering if anyone has ever used a Lambic Blend yeast for primary fementation of their Cider? I have a pack of Wyeast 3728 that Im thinking about using, but now I'm unsure as I cant find any info on anyone using it for Ciders. It does sound intriguing to me although part of me wants to just pitch 05 and know what Im going to get.

I'm using unpastuerized Cider from a local Farm and will be doing a variation of the Graff with steeped specialty grains, dme, and a little bit of hops.

you'll most likely get a very sour product. using 05 first and then pitching the lambic blend in secondary would cut back the sourness.
