I made a GF Ginger Beer
in the spring that turned out okay. The approach I took was to layer in the ginger flavour at 45min, 30min, 15min and finally a dry hop for a week or so, kinda like cooking. This way you get the bite from the "Dry Hopped" Raw Ginger and more mellow flavours the longer that it's actually cooked. Also, I added some complimentary flavours at 5min, lemon grass, Lemon Zest, Nutmeg, Cinnamon and Cloves.
