We bottled a week ago and tonight decided to put some labels on them, while working with the first 12, two opened up and were hissing, letting the carb out. Can I do anything from keeping these from becoming a box of bottle bombs??
 
Let them condition without being disturbed for at least 21 days...hopefully that will ease your trouble... it sounds as if you over primed your brew and did not seal it correctly ...
 
What size batch and how much priming sugar? Did you rack on top of the priming sugar? If not did you stir the beer before bottling?

It could be that you have the sugar unevenly distributed. If that's not the case, and you primed accordingly. I would say just let them sit as is without disturbing them. If you are worried, put them in a big tote with a lid on it.

Lastly, it could be an issue with the bottles or capper. There are different style lips on bottles that could cause a seal issue.
