My next brew will be a sweet stout which I plan on ratcheting up with some cocoa powder and cherry extract/purée. I'm looking for some feedback on the base recipe. I want a nice creamy stout but something that will not overpower the cherry or chocolate flavor. This is a mini mash recipe.

3 lbs 2-row
1 lb caramel 60
12 oz chocolate malt
8 oz roasted barley
8 oz flaked barley
8 oz flaked oats
3 lb light DME

2 oz east kent goldings - 60 min

I'm not sure if I have too much going on with all the specialty grains. I'm also concerned that my pot will not handle over 6 lbs of grains during the mash. Should I simplify this?

Thanks in advance for any advice!
