K so I have bought the wood for my keezer. I am using 2x8 and foam insulation of 1/2".

Now I need to order the shanks/faucets what size shanks should work best? Don't want too long and get in the way and don't want too short where it's a pain to hook up.

4" shanks should work for you. You could get away with 3" but I prefer a little "wiggle" room.
