Is there any upside to letting an IPA sit in secondary for an extra week if the FG has been stable for a week? I do not want to lose the dry hop flavor. Thanks.

I agree. The interesting thing with IPA's is your going for that fresh hop thing, you really want to get that beer done as fast as possible. This is sort of the opposite of a lager- where you let it sit, clarify, modify, become a subtle drink.

I would dry hop in secondary and if possible I would use leaf hops. The leaf hops will act as a filter when you rack and issues of clarity that might arise using pellet are removed.

So like Poobah said, get it stable, dry hop (leaf IM), 7-14 days, bottle/keg, drink!
