Just wondering if you know what the assumed mash efficiency is of your LME Extra Pale Liquid Malt. I'm reading "Designing Great Beers" (EXCELLENT BOOK) and it talks about Extracts (good and bad).

Daniels said used 70% as a default number but it can be anywhere from 65% to 80%.

Have you ever measured it?
 
The section is talking about substitution of Extract for grain - I would THINK it is fermentation.

It talks about a study of 40 different extracts and how different the same style of extract can be with attenuation vaules rangign between 50 and 80%.

this can be controled with grain but with extract it can not.

The book says assune a 70% value.

another interesting thing is that LME tastes better then DME but DME is easier to regulate because you can add smaller amounts.

Excellent book!!
 
As Briess' stats show, I'm pretty sure most are around 80%.

That's also the value assumed by Promash.
 
80% is pretty darn good - I wonder where the LME comes from.

At 80% you would substitute 1lb of grain for .64lb of DME.


Anbrew - doing a little experimenting with yeast? Let me know how that turns out!!
