I am a long time drinker of Yerba Mate/Kombucha.
I enjoy drinking them both very much, and decided to create my own Kombucha utilizing Yerba Mate.
I followed Kombucha Kamp's recipe with a bottle of GT - Organic Raw Kombucha (Original flavor). I used Organic Yerba Mate (unsmoked) as my tea.
I am seven days into the brew and everything is smelling great, and the advice I had read online was to look at the scoby that was developing after 7 days.
Well I did that today as today was the 7th day, and I was unsure on what
I had found. I recorded a video of it (Sorry it is a crappy video... brand new video camera still trying to figure it out. Video is good enough to catch the general idea).

I think everything looks ok but then there is a patch of something that looks
a little unusual on the far side. I am not sure if it is fungus or not.
Does the scoby that is developing look healthy? Up close it looks like it has alot of bubbles.
