16 lbs. pale malt
1 lb hugh baird carastan malt
.5lb hugh baird brown malt
.5 lb chocolate malt
1 lb crystal malt
.25 lb roasted black barley


60 min. 3.1 oz cluster hops (7% alpha)
15 min. 1 tsp Irish moss
2 min. .88 oz Northern Brewer hops (9%alpha)
2 min. .74 oz Centennial hops (12% alpha)


White Labs WLP0001 (california ale) or Wyeast 1056 (american Ale)

.75 cups corn sugar for priming at bottle day.


45 min mash at 152 (24 quarts mash water)

collect 10 gallons, boil to 5 and ferment at 68 for 2 weeks.
