going to do Palmer's classic american pilsner Your Father's Mustache, which supposedly has an OG of 1.056. When I plug the numbers into beer alchemy, I'm only seeing 1.043... am I missing something?

Fermentables for a 5 gal batch are 7 lbs 6-row and 1.75 lbs flaked maize.

Thanks!

What efficiency did you enter into beer alchemy, what is Palmer assuming?

In either case an assumption is made about the potential of the ingredients, but that doesn't very by enough to make more than a point or two of difference.

Also, the IBU's aren't matching up - he calls for a First wort hop, but doesn't count that towards the IBU's and ends up at 29. Beer alchemy shows without the FWH a 33 IBU, and with 45...

I'm beginning to doubt the accuracy of this recipe, even though it seems to be highly recommended.... should I just keep the 80%/20% 6-row/corn ratio and bump up the amounts until I get to at least 1.05 OG?
