I've got some rinsed ECY-03, a blend of saison strains and one brett. It's been in the fridge for going on two weeks. I don't think the beer it came from fermented more than a couple weeks. Will making a starter further scew the ratio in favor of the Sacc?

Yes, but that is OK. What you want is for the sacc to be the dominant strain and use up all the O2, and the brett to reproduce anaerobically, and clean up all the scraps left over.

Healthy dominant Brett = fruity. Stressed Brett = rustic.
