I'd like to brew a hefewiesen this weekend that won't take long to be ready to drink. I'm a novice brewer, so I don't want anything horribly complicated. I'd like to user orange peel and coriander to add a good spicy flavor.

Any recommendations?

Do a search for blue moon clone. It is belgian wit, but usually made with neutral yeast (i.e. S-04). Wits almost always have both orange and coriander. Go look around in the HBT recipe database under Belgian & French Ales.

A hefeweisen is a german wheat beer with (typically) a noticeable clove, bubble-gum, or banana flavor that comes from the yeast, not the malt. These do NOT have orange or coriander.

I would recommend just getting an American wheat kit from northernbrewer.com. It's 20 bucks, tastes clean, and actually ended up tasting phenomenal after 3 months.

Also, try adding some peach or apricot extract. Also available on NB for 5 bones.

Here's a very simple delicious extract hefe:

Boil 60 minutes:
6 Lb - 50/50 Wheat DME
1 oz - Czech Saaz hops (2.5%-3.5% AA)

Boil 15 minutes:
1 unit kettle fining (Irish Moss, Whirlfloc, etc.)

German wheat ale yeast (I use Wyeast 3068 Weihenstephan)

Everyone I know loves this simple brew. Cheers!
