Lager start from a single WL vial

I plan to a brew a lager with a 1 gallon starter. Do I need to step this up since I don't have a stir plate? My tentative plan is to make a small starter from a single vial of White Labs American Lager yeast in a 1000ml flask with a 1.040 DME wort. Let that go for a day and then pitch into a gallon jug with more 1.040 DME wort and let that go for two days. I'll intermittently stir to suspend the yeast periodically. I'll crash cool the gallon starter and then decant the beer and pitch the yeast slurry at 50 degrees. Would this be sufficient for a 1.050 OG 5 gallon beer?
