I've finally got some kegs for converting to kettles, but I have one question. Should I attach the spigots with welding, or some sort of threaded set up with gaskets?

It depends on how much you're looking to spend. If you are paying someone to convert them for you, it may be only a few extra bucks for them to weld on a spigot. I converted my own keg, so it would've cost a bunch to get someone to weld it. I used a Zymico Weld-be-gone (no affiliation) kit...worked like a champ. Just drill a hole and screw it down. Piece of cake.

If you have one welded on remember to have some sort of extension on the inside so you can hook up a filtering device.
