Diacetyl rest at 1.020 or FG?

Hey folks,

I have read that when making a lager, the diacetyl rest should be performed when a gravity reading of 75% attenuation is obtained. I would like to know why this is?

I performed my diacetyl rest at FG with seemingly no ill effects.
 
There's nothing wrong with resting at FG.

However, raising your temp to diacetyl rest before the yeast flocculate out is a good idea in order to ensure a successful rest. That's why it is suggested that you do it before FG.

On the other hand, resting before 75% attenuation risks producing unwanted esters.
