I am not going for a clone of any sort, just a good drinking Irish Stout.

Does anyone see a real problem using a Safale 56 yeast cake to ferment an Irish Stout? I have an IPA fermenting now, very nicely I might add.

Sure, 56 is a good yeast for brewing a stout but it will not be as dry as you would get from a typical irish ale yeast. I used 56 on my last one and it really lets the gain & hop bill shine.
