Right before I was going to take my OG reading on my kiwi wit. It was around 2am when it happened so I could go to my LHBS to pick one up. I pitched the yeast and everything's fermenting happily now. Should I be worried about not having an OG reading?

If it was extract you should already know pretty close what the OG was. Just pick one up so you will know when its done.

Don't know if anyone will see this but: I forgot to top off my water in the carboy about 12 hours into fermentation. I just added a .25 gallons and realized maybe I shouldn't have done that...am I worrying to much?

Should probably be ok as any gear touching the carboy or what went into it was sterile.
