I'm using K-97 for the first time in my conical - this batch is 35 gal of Dusseldorf Alt. Had a nice primary fermentation for about 10 days @ 63F, at which point I dumped some yeast but there just wasn't much settled out due to the top-cropping nature of this yeast. The beer tastes great already btw.
I'm not sure now how to manage this yeast as I'm used to dealing with strains that flocculate and drop out well.
Anyone got any tips on how to handle this yeast from here??
