Can you open the primary to take a specific gravity reading to justify bottling without contaminating the brew? I have been very worried about contaminating my beer, so much so 2 batches ago I had a funny taste I believe was due to excess bleach in my sanitizer is what I gather from my readings. Am I babying my brews too much?

Sanitize whatever you're using to pull the sample, or if you're going to just drop the hydrometer in, make sure you sanitize it thoroughly. While there is certainly nothing wrong with bleach (it's what I started with too) you might want to think about getting some no-rinse sanitizer to use for your brewing.

Beer is pretty forgiving stuff as long as you sanitize properly. And because you're still new it's hard to keep your hands off it. :)
