recommend a hop schedule ??

aight, i have only had one beer, so im not drunk posting :)


i am brewing a pale this weekend, the LHBS recommended centenial (10.0), and cascades(5.5), but neglected to gimme a hop addition schedule.

i have 2.0 oz of each....

i would like a hoppy pale, not quite an IPA assuming i have enough hops for that.


recipe will be 2lbs of base grains mini mashed, and 8lbs of pale LME. the base (damn i did not write it down) if i remember was .5lb munich... .5lb of ??? (it was 10l...) and 1 lb of marris otter if i am not mistaken.


gurus.............suggest away please!
 
Here's my thought:

1/2 the Centennial for 60
1/2 Centennial for 30
1/2 Cascades for 15
1/2 Cascades at 5 or flameout
 
1 oz centennial at 60, the other at 30-20.
.5 cascade at 10 and .5 cascade at flame out.
Dry hop with the last oz. of the cascades.

Not having the recipe makes it impossible to get a IBU.
 
I like Conroes ideas, but that might get you close to IPA territory if you go 60,30,10,5,DH.

I saw a graph somewhere that showed the peak flavor addition time was at 20 and peak aroma was at 5 minutes boil. I have been doing FWH (can you do this with mini-mash?) 60 or 90, 20 for flavor, and 5 for aroma. I also like dry hopping to impart a nice strong hop flavor and aroma.

You said not quite IPA range, so I might go for something like this:

1oz Cent @ 60
1 oz Cent @ 15
1 oz Cascade @ 5
1 oz Cascade Dry hop in secondary for 10 - 14 days.

That should give you a nice hop bite, but not be in your face.

close to what i was thinking, but the cent is so strong compared to the cascade, i was a bit lost.
i messed with beersmith on this, and it was lookin like 90 ibu my first try. have it down to 53, with an estimated abv of 6.5
seems like a decent balance.

ok

here is what i am doing.
brew day was put off, so im currently doing it now...

1oz cent @ 60
1oz cent @ 30

.5 oz cascade @ 15
.5 oz cascade @ FO
1oz dry in primary after 6 days.


recipe is as follows...

8lbs pale lme
1lb 2row
.5lb munich
.5 crystal 60l

og est was 1.068
measured... well gimme time to finish! :)
est ibu 76.6!

well, i been drinkin alot more ipa, so we shall see how it tastes.
 
OG ended up @ 1.064
missed by a little, but was a tad over 5 gals too.... thought i would lose a full gallon and did not.

ohh well. we shall see in a couple months what happened!
