First post....
I made the following
1 gallon Apple Cranberry Juice (Trader Joes)
1 gallon Cherry Cider (Trader Joes)
1 gallon Fresh Pressed Apple Juice (TJs)
0.5 gallon TJs Organic Apple Juice
0.5 gallon TJs Black Raspberry Juice
0.5 gallon TJs Cranberry Raspberry Juice
0.5 gallon TJs Spicy Apple Cider
1 lb. 8 oz Honey
1/2 lb. Brown Sugar
1 tsp. Acid Blend
1 tsp. Tannin
2.5 tsp. Pectic Enzyme
4 Campden Tablets (crushed)
2 tsp. Yeast Nutrient
1 package WYeast London ESB Ale
Started on 3/4 and transferred to secondary just now (12 days later). I took a taste and was fairly pleased. I can still make out many of the juice flavors (which I was aiming for) but it was VERY tart. I added about 2 lbs of thawed frozen raspberries to the carboy before transferring. Will this be enough to sweeten it a little? If not, what is the best way to do this and when?
