so i go with a NB Kit - Chinook IPA. did some adjusting to the recipe.

here is where i think i flawed.

there was 6# LME and 1# DME in the kit and I added andother 1# DME to the 5gal recipe. the OG should be around 1.058, correct??

when i topped off the partial to 5.25g, i checked my SG and came to 1.036

i am going to assume that i had not mixed the boil wort and the top off water very well and will have an unknown ABV. (can calculate that later)

any thoughts??
 
If you know the ppg for your malt extracts, and your fermenter has accurate gallon markings, you should be able to mathematically figure out the OG.

How much were you topping off with?
 
Next time you need to shake that carboy like it owes you something.
 
IIRC, LME is usually around 36 ppg and dme is 44ppg, so add up your total points and divide by the volume:

36 * 6 + 2*44 = 304 ppg / 5.25 gallons = 1.0579 OG

It's extract so it has to be correct, once you start mashing it gets much trickier. I'd suggest taking readings before topping off and adjusting for total volume to get better accuracy, i.e.

batch OG = post-boil OG * post-boil volume / batch volume
