Brewing my first partial mash lager. I'm holding temps as close to 58-60f as possible. From what I understand when fermentation slows I should raise temps a few days for diacetyl rest. After that I can rack to secondary and LOWER temps past wyeast recommendation for yeast right? What should I aim for...?
