I made some AppleJack from a base of
1gallon Cider
6.5oz Light Brown Sugar

My OG was 1.090 and FG 1.000 Giving me an approx ABV of 11%
I then took the cider to a shallow bucket and used the great New England winter to reduce that to 2 pints. I then spiked these 2 pints with oak.

My intentions now are to bottle this to a 750ml wine bottle and age for a year.

My question is I have both Pot. Sorbate and campden tablets, should i use either of these(or both) and how much when i bottle to improve aging or just go for it.
