I recently put the finishing touches on a pilsner I made for my sister's wedding. I chilled it, kegged it, and force carbed via the shake method and got it perfectly carbonated. It tasted delicious and I was very proud, perfect head space, great head retention no foaming issues...perfect beer.
Then I left it in the kegerator for about 2 weeks at around 10 psi, and now it's super-duper over carbed. My lines are correct and my system is balanced, everything is cold enough, this is a problem of too much bubbly bubbly in the brew.
Is there any other sure-fire method of removing the carbonation than taking it off the co2, shaking, purging, repeating, until I have flat, stale beer then repeating the carbonation process?
