Hey all,
This last weekend I brewed a hefe and am fermenting it with Wyeast 3068 Weihenstephan. I am using a Blowoff tube into a gallon jug of starsan.

The fermentation is crazy like none of my beers before. There appears to be a ton of yeast collecting in the bottom of my Blowoff jug. Can I wash and reuse this yeast even though it's covered with starsan, or can I only reuse the yeast that is left in the fermenter?

I wouldn't try to reuse yeast that has been soaking in Starsan solution.

You could instead remove the top of your fermenter and scoop some of the krausen from the top into a sanitized jar, and make a starter from that.

If you are using a carboy as your fermenter, I'd wait until the beer comes out of there and wash/collect from the yeast cake.
