I just sampled my "RED HOOK" ESB clone after it has conditioned for 2 weeks in the bottle. It tasted a little "green", but was very amber/dark. I have brewed this before (about 7 years ago), and it came out closer to the intended pale ale color. I was wondering what attributed to the dark color? My boil was only about 1.5 gallons, and i steeped the grains a little high, about 170 degrees which I now realize was high. Can these two factors be the culprit? Will the color lighten with age?
