I've got a busy weekend planned and am hoping to get a batch brewed as well. My plan is to start the mash on my lunch hour tomorrow and finish up after work, so the mash will be sitting for roughly 4 hours. Would there be any unwanted effects of the extended mash period?

From personal experience, the beer ends up with a little less body and higher alcohol, due to the exteded enzyme action on the long chain sugars and dextrins. It hasn't hurt it, but I can taste a difference in a one vs two hour mash for the same beer. I got the info from The Complete Joy of Homebrewing as to why it was different. Thanks Charlie P!

that makes sense. Even after the conversion of starch to sugar is complete the Beta enzymes would continue to break the larger sugars down into something more fermentable.
