At times I could keep a fermenter cool in certain closets but I have another idea.

I'm thinking about placing a three gallon carboy in a five gallon plastic pail and then add water to the pail to help limit temperature fluctuations. This 5 gallon bucket with the carboy would sit on the concrete floor of my garage surrounded by a 2" Styrofoam box.

With the addition of a pair of aquarium heaters to avoid too low of temperatures I believe it's my best option to having a slow fermentation.

When really cold weather comes I could insulate the bottom as well...

Any thoughts?

I'd say that's a pretty good start, the water will help moderate things. Not sure how cold it gets but for me winter is a time to work on lager recipes.
