I have read in the pros and cons analysis of steel vs aluminium posts that it's easy to maintain the passive oxide layer. If you create it by boiling water in a new pot, what do you need to do to maintain it ?

i havent needed to. Everytime you boil beer it is oxidizing the metal again...only the first time its needed or concievable if you scrub off the oxide coating (never seen this atleast on mine)

edit: oven at 350 for a few hours also works

It's there until you remove it through scrubbing or you wash the pot with an acidic cleaner. If this happens, just boil water in the pot again.

Ok so the oxide layer is a visual thing and you'll know if you've scrubbed the pot too much and scrubbed it off ?
