I am brewing one today and it is a Saison recipe from Brewing Classic Styles. The recipe calls for #1 cane sugar but does not tell you when to add it. Do I add it to the boil, primary, secondary???? I love this book but the recipes are not too clear.

Thanks,

You can either add it in the boil, or you can save it and when your ferment is JUST about to taper off in the primary, boil the sugar in a little water and add it then.

I add mine in the last 10 minutes of the boil, that way my OG and FG match and I don't have to do any fuzzy math. :)
