I waited for pitching temperature, covered it with a plastic bag and sat it on top of my stir plate.

CO2 will flow out and i think its pretty safe from bacteria.

Does anyone see and issues with the above?

BTW, I needed a started (high gravity IPA brew)
 
Only problem I'd see is if the coffee pot isn't cleaned out enough and adds some bitterness to the wort. Most likely isn't a problem if the spent wort is decanted off the yeast cake anyways.
 
carbon dioxide can get out, but oxygen can't get in. The purpose of a stir plate is to allow the exchange of oxygen and carbon dioxide. I'd sooner put tinfoil loosely over it.

Remember, nasties cannot crawl, so as long as they can't fall in when riding in on dust particles, sanitation is fine.
