I'd appreciate suggestions. I hope to brew this in about a month.

Target volume 2.8 gallons

Grain

2.5 lbs. Pale 2-row
1 lb. Vienna
12 oz. Victory
12 oz. Oats, flaked, toasted
4 oz. Special B
4 oz. Chocolate malt
4 oz. Roasted barley
4 oz. Crystal 40L
2 oz. Crystal 80L
1 oz. Crystal 120L

Sugar
8 oz. Lactose
2 lbs. Amber DME (I don't have a big enough pot to mash enough grain)

Hops
1.3 oz. Willamette (60 min.)
0.5 oz. Brewer's Gold (30 min.)

Yeast
Fermentis S-04

BIAB mash in 9¼ qts. water, 150 °F for 90 minutes. Tea bag sparge/remash in 6 qts. water in second pot at 160 °F for 15 minutes. Mash out at 170 °F. Combine runnings in first pot, and boil 90 minutes, adding hops as indicated. Add lactose and DME with 15 minutes remaining.
