I brewed the following recipe on Christmas day.

2 lbs - 6 row , 30 min steep @ 153 – 3 gals distilled water
1 lbs - rice syrup @ boil
1 oz. - hallertau hops @ boil
1 oz. - hallertau hops @ 55 min
3 lbs. - light DME @ 60 min flame out
2 Coopers ale yeast @ 72 deg. – 3 gals distilled water

Today I pulled a sample with my thief to measure the gravity. I never put the sample back in, I dump it in a glass and usually smell and taste it. The taste was to be expected but the smell was really yeasty. Any input ?

yep, beer in the fermenter will undoubtedly taste like yeast since the yeast is up in suspension fermenting said beer. that flavor should be all gone by the time you're drinking that batch.
