So I'm planning on trying to make a Winter ale style beer, working from a sort of darker amber starting point. So far this is what I've got:

Light DME: 6.5 lbs.
Crystal 40L: 0.75 lb.
Crystal 60L: 0.75 lb.
Chocolate Malt: 0.5 lb.
Blackstrap Molasses: 0.5 lb.

Fuggles:1.25 oz. (60 min.)
Kent Goldings: 1 oz. (5 min.)

Vanilla Bean (1 in fermenter)
Cardamom (.5 tsp. in 5 min. of boil)
Ginger (.5 tsp. in 5 min. of boil)

Wyeast 1056 American Ale

OG: 1.057
FG: 1.015

Again, any advice would be much appreciated. I'm especially looking for any info about the amounts of spices to use, as I've never used any of them in brewing before. Thanks!

I find American Ale yeast to be pretty boring. To me, winter warmers seem English, so I'd use a S-04 or whitbread type yeast.
