hello,
My cider is aging for a month now. And I want to taste it, but I am afraid to get air in the keg and damage my cider. I have read somewhere, that cider which has completed its fermentation course and is at complete stop of bubling is needed to use co2 gas to force all air out of the keg. Is that true? Or I can just remove bung, taste cider and refit bung for further aging.

Purging a keg with CO2 is great, but I think most cidermakers just try to minimize headspace. If you don't have a lot of headspace, I wouldn't worry about tasting the cider. If you have a large amount of headspace and can't purge with CO2, you might want to top off with fresh cider or move to a smaller container.
