what can i do to get the most out of my simple LME red ale kit ? can i add both cans of muntons at he end or should i do that with just one ? can i add more hops ?

I don't know about adding both cans of extract at the end, it would def effect your hop utilization. Do you have any seeping grains or are you doing a partial mash? If a partial mash you should be ok. Otherwise add one can just before boiling (remove from heat while adding) bring to a boil and add your first hops. I would do the late addition ~20 mins left in the boil.

i do have steeping grains...no partial mash. can i steep the grains longer than the 30 min in the recipe to get more flavor ??
