How to save & store used oak?

I have several single gallons of Flanders Red going with large oak pieces (3 inch lengths of oak staves) in them, and the same with several beers with Brett in secondary.

I have read that brett (and bugs) like to live in the oak. How would I save these oak pieces to have them available to inoculate new batches?

Do I dry them out (how would I keep them sanitized)? Do I store them wet (how do I prevent mold)?

Anyone know how good these would be to inoculate new batches.
 
I have saved chips and cubes before- I just poured a bit of trub out with the chips into a baggy and tossed it into my beer fridge for the better part of a year. They seem to start back up just fine- a little slow, but that's no surprise since they were old and there wasn't much wood to hold bugs. I suppose you could do the same thing with short stave pieces. I have no idea about drying them.
